St Augustine Style Thanksgiving Stuffing with Oysters

Fabulous stuffing recipe featuring fresh oysters is a must-have St Augustine Style Thanksgiving dinner addition. Guests love it!
  • 1 lb (12 c) of homemade bread, cubed
  • 3 tbs olive oil
  • 2 med onions, chopped
  • 1 1/2 c celery, chopped
  • 3 tbs fresh thyme
  • 1 tbs fresh sage (optional)
  • 1 tbs garlic, minced
  • salt and pepper to taste
  • 1 stick unsalted butter, melted
  • 18 oysters shucked, drained, and chopped
  • 2 1/4 c low sodium chicken broth or turkey stock
  1. Preheat oven to 325°F
  2. Spread bread cubes in shallow baking pans
  3. Bake in upper and lower thirds of oven until golden
  4. Transfer bread to a large bowl
  5. Saute onions, celery, thyme, sage, garlic until vegetables are softened
  6. Transfer to bowl with bread cubes
  7. Gently stir in butter and oysters
  8. Drizzle with stock or broth then season with salt and pepper
  9. Toss well and transfer stuffing mix to a buttered shallow baking dish
  10. Bake, covered, in middle of oven 30 minutes
  11. Uncover and bake until browned – an additional 30 minutes

Since I do not like sage I leave it out of the recipe, but so many people like sage stuffing that I left it in for an option. It’s up to the chef.
