Cranberries are a mainstay for Thanksgiving. Here’s a cranberry side dish that distinctly St Augustine Style.
St Augustine Style Thanksgiving Cranberries |
- 12 oz fresh cranberries
- 1/2 c dried pineapples
- 1 tsp olive oil
- 2 tbs seeded Datil peppers (or jalapenos)
- 1 c pineapple juice
- 1 c sugar
- 1/4 c lemon juice
- 1/4 c lime juice
- salt to taste
- Sauté Datil peppers (or jalapenos) in 1 tsp olive oil on medium heat 1-2 mins Add pineapple juice and simmer until mixture is reduced by half
- Add sugar,lemon, lime juice and salt bring to a boil
- Add cranberries; simmering until they burst – remove from heat
- Stir in dried pinapple
- Chill at least 2 hours
- Eat and enjoy
Datil peppers are hotter than jalapenos. The measure of datil peppers or jalapenos can vary according to your taste.
