Roasted Florida Grouper and Vegetables

Ingredients
  • 1 large Florida grouper fillet (approximately 1 pound)
  • 3 tbsp. Olive oil (Whichever you prefer)
  • 1 small Florida zucchini, chopped
  • 1 carrot, chopped
  • 1/2 red pepper, chopped
  • 1/2 yellow pepper, chopped
  • 1 medium onion, chopped
  • 8 cherry tomatoes, quartered
  • 1 tbsp. ketchup
  • 1 1/2 c. tomato juice
  • 1 tbsp. brown (or raw) sugar
  • 1 lemon, freshly squeezed
  • Freshly ground pepper to taste
  • 1 tsp dried oregano
  • 3/4 tsp. dried sweet basil
  • 1 tsp. kosher salt
Instructions
  1. Preheat oven to 350 degrees. Place the fish in the middle of a bakng pan. Spread 1 tablespoon of olive oil on fish, covering both sides. Squeeze the lemon over both sides of the fish and sprinkle with black pepper to taste. Saute the chopped vegetables in the remaining olive oil just enough to soften and set aside. In a small cup mix oregano, salt and basil and spread on both sides of the fish. Pour sauted vegtables over the fish. In a bowl mix, ketchup, tomato juice and sugar and then pour over the fish. Cover and bake until fish is cooked. Fish should be flaky and soft; don’t overcook. The general rule for cooking fish is 10 minutes per inch of thickness.
